Jamaican Steamed Fish
INGREDIENTS:
2 medium sized whole fish (cleaned)
1 medum cho cho
1 whole scotch bonnet pepper
6 medium okras
1 cup coconut milk
1 small carrot
3 cloves garlic
1 large onion
2 stalk scallion
2 tbsp butter
3 sprigs thyme
6 grains pimento berry
METHOD:
Clean and wash fish with lime juice , drain on paper towel. Season fish with salt and pepper. Wash and cut okras in slices julienne carrot, cho-cho and onion. Chop garlic, scallion and thyme into small pieces.
In a pre heated skillet add butter and vegetables sautee for 3 minutes. Add coconut milk, hot pepper and pimento berries to skillet and bring to boil. let simmer for 10 mins.
Place fish into the boiling coconut milk, allow to steam for 10 -15 minutes season to taste with salt/pepper. Serve (best served hot) with your favorite side Jamaican steamed bammy or Water Crackers as the side addition which can be added to pot 5 minutes before the end.
