Eulalee Wilson has been working in the kitchen department at Jamaica Inn for 11 years. Her dedication, passion and team spirit have earned her the Employee of the Quarter award for first quarter 2014.
A typical day for Eulalee begins bright and early, as she often arrives to the hotel before dawn to commence her “mise-en-place” of breakfast. Her day-to-day repertoire includes meal preparation for breakfast and lunch. She enjoys her time in the kitchen, from cutting up vegetables to cooking the lovely Jamaican style meals you have seen on our breakfast menu.
One of Eulalee’s favorite dishes to cook, and popular among guests, is the national dish of Jamaica – Ackee & Salt Fish with fried breadfruit. She also loves to prepare mackerel coconut rundown and steamed fish.
Eulalee’s ensemble of Jamaican dishes are so delicious that guests often request her by name. For Eulalee, cooking for guests at Jamaica Inn is time well spent, commenting, “If you are passionate about what you are doing, and if you love it, then the hours spent are all part of the joy.”
When asked where she sees herself in five years, Eulalee replied that she hopes to still be working at our beautiful hotel with a plan in place to one day own a restaurant.
