Born and raised in Montreal, Chef Mathieu has built an international career across Canada, Mexico, the Dominican Republic, and the Bahamas. A winner of Chopped Canada and founder of acclaimed restaurants Jellyfish Crudo et Charbon and PubJelly, he is known for refined technique, global influence, and bold, modern flavours. Now based in Jamaica, he brings his dynamic style to kitchens across the island.
